PICKLING BEETS AND GARDEN VEGETABLES

As promised on the previous Jet Fuel Post – the Beet pickling recipe,

I am huge fan of pickling and health benefits of fermentation.  Several books and places for information HERE ,HERE and HERE.  We grew beets this year in our garden among a few other little beauties and besides roasting them I wanted to pickle them.  We harvested (LOL) our beautiful beets, cleaned and washed them, removing the stems and peeling.  There is such a satifaction of planting seeds – watching them grow tending and than eating what you made!  Crazy – I then pulled out my mandolin aka Mr. Danger please be careful when using this kitcehn tool  I sliced them very thin as to absorb the pickling liquid even better.  Plus they look so darn pretty that way.  Any slicing method you choose will do, maybe even thin matchstick slices that would be a good crunch.  For the pickling liquid use the recipe below.  I prefer a more vinegar, low salt version but try it out and make it you own.

***Side note:  I will even drink this after it sits for a while it becomes a “gut shot” I buy the Farmhouse:  Beet Ginger Gut Shot so this will be my DIY version.

Generic Pickling Liquid

This is a low salt, low sugar version so the health benefits shine through.  Not your typical dill pickle method.  

Course Snack

Ingredients

  • 1 cup Water
  • 1 cup Apple Cider vinegar or White vinegar
  • 2 tsp Kosher Salt
  • 1 tsp Mustard Seeds
  • 1 tsp Black peppercorns
  • 1 tsp Coriander seeds
  • 2 Bay leaves
  • 3-4 cloves Garlic - smashed and peeled
  • 1-2 Fresh Thyme sprigs

Instructions

  1. Bring all your ingrediants to a boil - except the Garlic & Thyme....

    Let cool for 15 min pour over jarred vegetables adding the fresh Thyme before pouring

Proof of a hard days work!  I close the lids tightly and refriderate since we didnt “can’ them and steilize the whole thing but this will last indefinetely – I hope your like this – share with me what you do with all your garden bounty!  This pickling liquid can be a base for what ever veggie you want to add, carrots, ginger you name it.

Of to the races all – it’s a busy Monday around here for me.  Restaurant stuff, new uniforms, light fixture, paint touch up, make sure to have a proper workout, prepare for small dinner party tomorrow night – I am going Mediterranean in my theme.  Plus will be posting on my skincare products and everyday makeup.  Working on some videos as well.   I am taking an online class for photos and videos!  Yeah!

FOUR SEASONS SPA MENU CIRCA 1985 “JET FUEL” SALAD DRESSING

I wanted to share this little gem with you – especially during the end of summer when veggies are everywhere!  Some of you may know that my husband is a classically trained Chef/Restauranteur.  We own a few restaurnts in the suburbs of Maryland outside of DC.  Mike graduated in 1984  from the well renowned Johnson & Wales Culinary College.  One of his early jobs out of culinary school was at the prestigious Four Season Hotel in Georgetown, DC!  “Auxchamps ” Kitchen.  Where he worked under Chef Douglas McNeill so Mike is full of recipes that I pull out from him now and again.  As we move forward on our healthy food journey I am loving the grain bowls.  He actually added one to our fine dining restaurant lunch menu at  The Tasting Room.  We try and eat veggie heavy meals when we can and this is so great to do in the summer.  I was bored with my salad dressings.  During a recent talk in the kitchen I was whining that I’m bored of my salads . He was like “Hey babe – I’ll make you “JET FUEL”  “What is JET FUEL”?  He explained that in the late 80’s the Four Seasons Hotel started a spa menu for their elite guests.  The dressing used in the kitchen was called Jet Fuel.  Um yes dont hold out on me babe.spa, diet, loriannmd, blank slate, urablankslate, dmv, frederick, blogger, four seasons, spa menu, foodie, jet fuel, recipe, dinner, diet, anti aging, cooking, weight loss, instagram, chef, mason jar, meal prep, He made some up and I was in love!  I keep a jar of it handy.  It lasts for a week or more covered in the fridge.  You can tweak it a bit here and there but the premise is that you want it to be very fresh, flavorful, very little oil, and no salt.  It highlights fresh veggies and garden lettuces without overpowering them.  It is low in fat, delicious and simply good for you!

Jet Fuel

Spa Menu salad dressing circa 1985 from the famous Four Seasons Hotel 

Author Mike Tauraso - Exec Chef / Restauranteur

Ingredients

  • 1/2 tsp Dijon Mustard
  • 1 Shallot minced
  • 1/4 cup White wine vinegar champagne can be substituted
  • 1 tbsp Rice vinegar
  • 1/4 cup Grape seed Oil (any light non flavored oil) plus 1 tbsp if needed
  • 1 tsp Apricot preserves substitute 1/2 tsp honey
  • 20 grinds Black pepper
  • pinch Kosher salt
  • 2 springs Thyme - fresh

Instructions

  1. Wish toghether in mixing bowl adding fresh thyme or any fresh herbs on hand.

  2. Tranfer to mason jar - shake - label and enjoy

  3. Keep refridgerated for a week or so - shaking each time before use

      

Below is my homemade version of a grain bowl with cooked Quinoa, (almost always on hand) summer corn, chickpeas, cucumbers (from Andrea’s – Mike sisiter garden), our heirloom tomatoes, fresh basil, sauteed squash, romaine and red onion.  The piece to resistance is our fresh garden pickled beets.  I add them at the end sometime with the pickling juice (recipe tomorrow). !

Now onto the weekend and an anti health day for us – a trip to Peking Gormet Inn – I may not post about it officially and just enjoy this bit of heaven on earth.  We will see how hungry I am and if I can hold off and snap a pic or two – maybe on instagram/instastories so check in.

DATE NIGHT – WASHINGTON DC “SHAW DISTRICT” RESTAURANT REVIEW – NOT WHAT WE THOUGHT

Mike and I had another date night in DC the other day.  I have  been holding him to the mothly date night ventures to DC or Baltimore – we started this last year and was epic fail – meaning that after big promises of “date nights” by the husband we only we went two times in six motnhs!  So after a bit of “explaining the importance to me” we are back on course.  Anywho, where’d we go?  After reading one of my issues of Washingtonian Magazine we decided on the Shaw District.

Alittle info on Shaw District – DC – Shaw technically includes the sub-neighborhoods of Logan Circle, Truxton Circle, and the U Street Corridor. It is bounded by 15th St NW, Florida Ave (formerly Boundary St), North Capitol St, and M St NW.

Although it has a diverse population, Shaw is distinctive from the adjacent areas due to its African-American heritage. It is popular due to its jazz clubs, bars, high-end bars and lounges, and for the marvelous food, including Little Ethiopia.

The neighborhood, named after Civil War Colonel Robert Gould Shaw, was first developed starting in 1865 when the end of the Civil War led to a huge increase in demand for new housing in Washington, D.C. The extension of streetcar lines in the early 1900’s up 7th St and 14th St also spurred additional development.

Because Shaw was not affected by covenants that prohibited property sales to African Americans, Shaw became the center of African-American culture in Washington and was home to many black-owned businesses, entertainment venues, and other institutions. It was the birthplace of jazz great Duke Ellington, who lived on the 1200 block of T St. It was the center of Washington’s music scene and includes the historic Howard Theater (opened in 1910), Lincoln Theatre (opened in 1921), and Bohemian Caverns jazz club (opened in 1926).

Following the assassination of Martin Luther King Jr. in April 1968, riots broke out at the intersection of 14th St & U St. The riots resulted in significant damage to 1,200 buildings and resulted in thousands of permanent job losses. With the introduction of crack cocaine in the 1970s and 1980s and the subsequent flight of residents and businesses from the area, Shaw succumbed to urban blight. The entire neighborhood was considered to be unsafe due to rampant prostitution and drug use.

However, beginning in the early 1990s, a wave of gentrification restored the area. In 1986, the Reeves Center, a 500,000 square foot municipal office building, opened at the intersection of 14th St and U St, bringing thousands of jobs to the area. The Shaw-Howard University Metro Station opened in 1991. In 2000, a Whole Foods supermarket opened at the intersection of 14th & P Street and quickly became one of the retailer’s highest grossing stores. Between 2000 and 2002, Harrison Square, the first large scale residential development in the area in a long time, was constructed. Since then, dozens of upscale businesses have opened and thousands of apartments have been constructed. Houses at Harrison Square, which originally cost $200,000 in 2000-2002, are now selling for $900,000.

Than we came across READ WALL – AMERICAN MENS TAILORING custom mens suits, shirts and shoes all AMERICAN MADE! We also found this shop  CHERRY BLOSSOM – It must have been only 300 sq ft but I could have stayed in there for an hour or more!

This post is hard to write because I was really looking forward to the meal.  It started out…… just ok the hostess couldnt really be bothered and literelly just tossed the drink / app menu on the table since we couldnt be sat until exactly 5:30 she said.  OK – the cocktail waitress was lovely however – very upbeat – quick and thanked us for coming in.  Got Mike a lovely Rose and myself a custom “mocktail” ginger and lemon strong – my favorite and served in a champange flute.  I love any of my drinks in a “fancy” glass.  Mike “yeah my baby loves her stemware”!  Truewords! The BBQ wagyu shrot ribs were like candy and the “Gnocchi Bokki” just was odd – kimchi pork ragu with italian flavors mixed in?  I don’t know people but I think grandma Hazel was drinking in the kitchen that night.  Teasing……..I have heard bruch is good but with all the choices we have in DC I dont think we will be back anytime soon.  I will say that I was very surprised by the server as the plates were cleared you could see we didnt finish much never they never asked if it was all going ok?  Maybe just a off night for the Hazel kitchen, you decide.
