To be honest not too much into the game but into the food all the way. Mike and I are having a few people over very casual. However I am running into a dilemma – we’ve been eating pretty “CLEAN” +Clean Program lately so I don’t wanna completely go “off the wagon” but that seems to go hand in hand with super bowl fare right?. So I am gonna serve a mix of healthy savory food with some gotta have big fat-so bad its good for you favorites!
Beer Wine Whiskey & Mocktails
Chips & Dip’s
Poached Salmon on bed of Savoy Cabbage
Clean Green Salad
Roasted Brussel Sprouts
Lemon Bar Dessert Courtesy of good friend Deb C.
3 ripe avocado’s – smashed
onion 1/4 med diced
cherry tomatoes – hand full washed & diced
cilantro – bunch remove stem rough chop
Tabasco – to taste
1/2 tea Olive Oil
Mix together and serve with tortilla chips – loving this brand right now found in the organic section of +GIANT Food Stores – recently came across on our ski trip to Big Sky and lucky us had it here at home! Gotta try it they are D-LISH!
Mediterranean Grilled Lamb Chops
6 center cut rib lamb chops ( I prefer Colorado )
5-6 large peeled cloves of garlic rough chopped
1/2 cup Olive Oil
1 Tbs crushed red pepper (more or less to taste)
1 – 2 Tbs dried oregano (place in palms and rub together – this releases the oils) drop in bag with everything
2 large lemons halved, squeezed and put in bag juice, lemons & all
Place all ingredients in shallow dish or large freezer bag ( my fave – easy clean up) mix together refrigerate for 1 hour or over night 9 tossing and turning in bag like giving a mini lamb massage every so often
Grill or bake chops your preference.
Serve with side Tzatziki – home made or store bought – homemade here. What did you expect people – “married to a chef“.
