So I have been loving this CHAI PUDDING that I came up with lately. I posted it on instagram and received several requests for the recipe so here ya go – give or take on the measurements – the consistency is a matter of preference. Add the fruits you like and go crazy – this is pretty low glycemic index (esp good for my pre- or diabetic peeps) Non dairy, low fat, and has a decent mount of protein in my humble opinion. I make a batch and it lasts coverd for up to 3 days.
CHOCOLATE CHIA PUDDING
A healthy non-dairy pudding that's great for breakfast or dessert!
- 1 1/2 cup Unsweetend Plain Almond Milk I prefer Almond Breeze Brand
- 3/4 cup Chia Seeds
- 1 tsp honey
- 1 tbsp flax seeds
- 1 scoop Vegan Chocolate Protein Powder I love the VEGA Vegan brand
Add ingredients to blender or vita mix and start on low - so things mix well easily so all the seeds dont fly to the top and sides. Than increase to high for 40 - 60 seconds it will thicken up. This is where you can eye things - want it pourable but not drinkable. More like a gravy
I like to portion into small mason jars 1/2 way full cover and chill covered for 1 hr - or overnight.
Before serving or while chilling I add sliced banana's, blueberries or any berry, smashed almonds, and than I top w/toasted coconut.
Enjoy - if you want to "fancy it up" before serving place on tray with small teaspoons,cute cocktail napkin and close your eyes you can almost believe this is a healthy banana split
Play with the recipe if you dont like chocolate ( your crazy ) add another protein and if dairy isnt an issue – top with a bit of whip cream and do your happy dance! This little baby is helping me to creep Mike away from Haagen-Dazs ice cream sometimes.
