Merry Christmas Everyone,
Are you in charge of Christmas breakfast or going to brunch? We are eating soooo much right now and I wanted to share a hearty filling healthy alternative to my regular pancakes. Try to sneak a little clean eating in there somewhere. Some may scuff but don’t knock it til you try it and this way you can have seconds at Grandma’s house and not feel guilty.
HEALTHY HOLIDAY PANCAKES
A healthy way to start your day.
Ingredients
- 1/2 cup ripe banana very mashed
- 2 eggs
- 1 tbsp flaxseed good fiber and protein
- 1/4 tsp cinnamon
- 1/4 tsp pumpkin spice optional
- organic grade b maple syrup
- 1 squeeze lemon
- 1 bunch blueberries
Instructions

Mix banana and eggs in a bowl add the flaxseed. Heat your skillet to med. heat spray w/ oil. Scoop a bit of batter size of lemon onto the skillet. cook until the edges are dry and browning. You want them to be kinda thin, flip and cook the other side. You are trying to get 4-5 pancakes from this. I like to add the cinnamon spice garnish with a few berries a squeeze of lemon and drizzle with organic grade b maple syrup or honey. Sometimes I like to add the blueberries into the mix before putting on the skillet. YUMMMMM
You can add more banana too or even a bit of yogurt on top.
Let me know if you try it and how you like it. I don’t always eat healthy pancakes (yes I love my IHOP) but when I do these do the trick. If not for the holidays than when you’re making those New Years resolutions.
