Cauliflower & White Bean Soup

Course Main Course
Prep Time 20 minutes
Cook Time 45 minutes
Total Time 1 hour 5 minutes
Servings 4 people

  • 1 head cauliflower core removed and rough chopped
  • 4 cloves garlic chopped
  • 1/2 med sweet onion chopped
  • 2 stalks celery washed sliced / chopped
  • 2 carrots washed sliced/ chopped fine
  • 1 tsp crushed red pepper flakes ( optional )
  • 1/4 cup olive oil
  • 2 handfulls spinach fresh cleaned stems removed
  • 2 cans great white northern beans or white kidney beans
  • 1 box vegetable stock ( mccormick kitchen basics - unsalted)
  • Kosher Salt & Pepper to taste
  • Parmesan cheese top just before serving
  • 1 tbsp butter
  • Water add purified water after stock bring to boil than simmer water should be about 2 -3 inches from the top of your pot


  1. Coat stock pot with olive oil and butter - over medium heat - saute onions, celery, carrots until tender ( stirring often so as not to burn ) add your cauliflower.  Stir and brown slightly - keeping eye on the pan not to burn - add more oil if needed.  Add crushed red pepper flakes.  When tender add drained beans and continue to stir.  Add 1/2 cup of the veggie stock and continue to cook until veggies tender.  Now add the chopped garlic and salt & pepper. Cook low med heat 7-10 minutes than add the rest of the stock and purified water until about 2 -3 inches from top of pot.  Stir and bring to a boil.  Turn down med. low cover and cook for 20 minutes more.  Taste for S&P add as desired.  Sometimes I add a veggie or chicken bouillon instead of more salt for flavor.  5 minutes before serving add your spinach - more or less its ups to you.  

    Serve and top with grated Parmesan - Italian bread or croutons.  

    You can also top it with cooked toasted quinoa for added protein and some crunch.  


This is simple, delicious and good for you.  Try it out and comment to let me know how it turns out for you.  Like I said you can top with quinoa, croutons and/or serve with crusty bread.  All your veggies for the day in one bowl.

As promised on the previous Jet Fuel Post – the Beet pickling recipe,

I am huge fan of pickling and health benefits of fermentation.  Several books and places for information HERE ,HERE and HERE.  We grew beets this year in our garden among a few other little beauties and besides roasting them I wanted to pickle them.  We harvested (LOL) our beautiful beets, cleaned and washed them, removing the stems and peeling.  There is such a satifaction of planting seeds – watching them grow tending and than eating what you made!  Crazy – I then pulled out my mandolin aka Mr. Danger please be careful when using this kitcehn tool  I sliced them very thin as to absorb the pickling liquid even better.  Plus they look so darn pretty that way.  Any slicing method you choose will do, maybe even thin matchstick slices that would be a good crunch.  For the pickling liquid use the recipe below.  I prefer a more vinegar, low salt version but try it out and make it you own.

***Side note:  I will even drink this after it sits for a while it becomes a “gut shot” I buy the Farmhouse:  Beet Ginger Gut Shot so this will be my DIY version.

Generic Pickling Liquid

This is a low salt, low sugar version so the health benefits shine through.  Not your typical dill pickle method.

  • 1 cup Water
  • 1 cup Apple Cider vinegar or White vinegar
  • 2 tsp Kosher Salt
  • 1 tsp Mustard Seeds
  • 1 tsp Black peppercorns
  • 1 tsp Coriander seeds
  • 2 Bay leaves
  • 3-4 cloves Garlic - smashed and peeled
  • 1-2 Fresh Thyme sprigs


  1. Bring all your ingrediants to a boil - except the Garlic & Thyme....

    Let cool for 15 min pour over jarred vegetables adding the fresh Thyme before pouring

Proof of a hard days work!  I close the lids tightly and refriderate since we didnt “can’ them and steilize the whole thing but this will last indefinetely – I hope your like this – share with me what you do with all your garden bounty!  This pickling liquid can be a base for what ever veggie you want to add, carrots, ginger you name it.

Of to the races all – it’s a busy Monday around here for me.  Restaurant stuff, new uniforms, light fixture, paint touch up, make sure to have a proper workout, prepare for small dinner party tomorrow night – I am going Mediterranean in my theme.  Plus will be posting on my skincare products and everyday makeup.  Working on some videos as well.   I am taking an online class for photos and videos!  Yeah!

Not A Fail – Just Not As Planned

Good Morning All,

So Monday will be the end of the 21 Day Reset and didn’t go how I thought it would.  It is not a fail – just not as planned.  I just had an enormous amount of things going on the past month – all over the map.  Work, family, home and some health things to address.  Nothing serious just some energy levels that need addressing and Mike had his first colonoscopy and still is smoking so those things have really taken precedent of course.  Plus it rained and was cloudy a ton the past few weeks.

Today however the sun is out and we are supposed to have a heat wave.  Mike and I are heading to

DC UNION MARKET and I am so excited.  There is a shop there that its focus is just on healthy SOUP’s!  That’s my dream restaurant people.  Also a spot called TaKorean a mix of Korean in a taco – whaaaaat sounds yummy and funky and just what I’m craving!  You should check this market out for sure when in DC along with tons of other hot spots in town.  I will be posting those pictures later today on my instagram.

Here is List 1 To Prepare For The Next 21 Days


Hey Hey Happy Saturday,

Today was a great day – the sun was fianally back out – took a quick trip to DC and had a great lunch with my hubby at Peking Gourment Inn – hands down best Peking duck ever!   Now, winding down from the day to take my “normal” hot bath for the night.   Sidenote – I just love bubble bath’s & hair masks and this one from Borghese does not dissapoint.


But before bath, bed, and Netflix, here is list 1 to prepare for this “reset”.   These are things you should have this first week.  Just do your best.  If you dont want to get everything, no worries it’s up to you.   This is meant as fun not a chore.  No winners here – Oh wait there will be!

To begin, set aside a clutter free area in your home – be it a small room – maybe its only on your bed – or part of a walk in closet HAHA!  This will be used as a spot to go to daily.

Wash a set of sheets.  We have “homework assignment” begining tomorrow/Sunday if you can fit it in…. It’s a really good one, promise!


  • Lots of veggies – shop your produce dept – farmers market etc. to your little heart is content
  • Bag of lemons
  • Quinoa
  • Cucumber, carrots, celery, green apple
  • Onions all kinds & green
  • Cabbage any type red, napa, etc.
  • Almonds or walnuts
  • Fruit – whatever is in season and that you like
  • Fresh Berries I love raspberries ( seem expensive but what do you spend a day eating out or on coffee at shop ) so full of goodness worth the sprulge
  • Salmon
  • Kosher salt
  • Soup Stock low sodium preferred I use veggie but you choose
  • Coffee (even if you don’t drink it grab a small bag – will be using the brewed grounds)
  • Baking Soda
  • Hydrogen Peroxide
  • Epsom Salt large bag – grab two or three Walmart good place to buy in bulk
  • Eggs for cooking and facials
  • Alberto VO5 – yeah we are going old school – must be a reason some products have been around for ages people

Below are items needed from your Health food market.  If lucky, your normal grocery store – or from a Super Walmart.

  • Sonne’s No 7 Detoxificant Sonne’s No. 9 Intestianl Cleanser ( this is optional and should be done when you can um…..Be Close To Home! I’ll try first and let ya know – LOL 
  • Unsweetend cranberry juice
  • Dandelion tea 
  • Essential oil – eucalyptus – lavender – grapefruit (or any citrus you like)
  • 2 spray bottles (found most health food stores – use glass if possible ) making our room linen and bath sprays in them
  • Meal prep containers ( glass is my preference but…….. use what you have.  enough for 2 days at a time so you can clean in between
  • Large glass jar / jug / thermos for storing our detox flush drink
  • Water/juice refill bottle to take above juice with you everywhere

Below some items from your local ethnic Market

  • Tapioca Starch – get in small bag from Asian market – this is a must for some great facials order online if you have to
  • Sesame oil – Asian market
  • Spicy Chinese chili paste your choice (i’ll show you what i have)  
  • White Chinese vinegar 
  • Curry powder
  • Cayenne Powder

Update On #30dayChallenge

Brrrrrrrr Come On Spring – We had a taste of it last week and I LIKE IT!


Update on my #30dayworkoutchallenge!  Going well almost at the halfway mark!  Basically just entails me doing something physical for 30 minutes for 30 days straight.   This time around however I have my +iPhone Watch and have to do min. 10,000 steps a day.  That’s five miles people……..

It has been really hard some days – ABE our Newfie pup is loving it but like yesterday as temps dropped – I cringed going outside.  I had to do the last 2k in basement on treadmill.  Seriously it was all I could do to reach that goal – some days easier than others for sure.  Like above on first nice day- I was a walking fool.  It’s especially difficult after a long day – cleaning, PR work, dog training, making dinner.  Happy to do all these things it’s just I get tired really tired.  Next week will be even busier so I need to get some good sleep.  Also make doing detox baths lots of fruit-veggies will be key – maybe sneak some acupressure in and cut back on the sugar.


Speaking of sugar…..are you addicted to sugar? 

I AM!  You’re not alone. In 2007 a group of researchers found that sugar surpasses what is called “cocaine reward” in most mammals, including rats and humans. The frightening result of this study is the conclusion that sugar is more addictive than cocaine. 
Although sugar does not contain opiates (like other addictive substances such as heroin) it does stimulate the release of endogenous opiates. Opiates and their receptors have largely been attributed to what is known as “reward.” When the opiate receptor is filled over and over again, we feel a sense of pleasure and reward. No matter how harmful a food or substance may be to the body, this sensation of pleasure keeps us coming back for more, while at the same time altering our brain chemistry. 

Can’t kick your sugar habit? You’re not alone. Statistics show that in 1822, the average person consumed 6.3 pounds of sugar per year. However, by 1999, the average person consumed 107.7 pounds of sugar per year! In fact, Stephen Guyenet, a neuro-biologist at the University of Washington, predicts that if we continue eating sugar with as much enthusiasm as we have over the last 200 years, by the year 2606 the U.S. diet will be 100% sugar.  

The mis-education about the dangers of sugar consumption is widespread.  It is in the school systems, the home, and even the medical community. 

Like any addiction, change happens when we realize that we are greater than the sum of the chemicals in our body. This can be tough to swallow – especially when it comes to breaking habits and ending addiction.  Sugar as an addiction is strange concept for most of us.

So how do we beat this?  In addition to determination and discipline, here are some helpful tips.   


1. Eat sour foods. The sour taste of some foods, like apple cider vinegar ACV this will naturally curb your cravings for sugar.
  I mix some with warm water and drink slowly (not on empty stomach to acidic for me) in the morning.  

2. I also eat fermented foods and probiotic beverages. Fermented foods are sour, easy to make- see this book art of fermentation  and they are relatively affordable.  Probiotic beverages also taste sour, and even a small dosage goes a long way.  Both are full of beneficial bacteria, which drive out disease-causing bugs that increase our desire for sugar.  I will be back to +HEX Ferments this weekend to restock! 

3. Replace it with something else – set reasonable goal and reward your self (maybe you don’t find this reasonable but really respond to a good old carrot dangling (hello Gucci shoes)

Dreaming of a Pink Christmas!

Well Hello There,

This post is a “just cuz” one.  If you know me; you know I love the colors Pink, White, Black and adore me some Glitter!  So all these “faux” Christmas trees that have been on trend lately just make me plain happy – plus pre-lit and no needles, use again next year, win win.  (I know dad nothing beats real but……..) 

Gosh I love a White pre-lit with white lights tree or even a bubble gum pink tree!  Que angels singing!  “ahhhhhhhhhhhhhhhhh” check out these examples I found online surfing.





Putting up our tree this weekend – a bit late this year due to travel and family priorities.  With our pup Abe @abethenewfoundland still just using the 6ft White Tree I purchased from Walmart few years back!  Want to get Pink Tree too but may wait and see how he handles the ornaments this year first.  
Trying to set up family picture tomorrow as well – its just gonna be Abe, Mike and myself.  Since kids grown and outta house all over the place this will have to do.  Check instagram tomorrow for that one!  Tell me how your gonna decorate – do you have more than one tree?  Traditional, rustic, modern, vintage….. holiday Season 2016

Merry Christmas & Happy Holidays Everyone!

Finishing up my shopping but this rain and ice making for rough go of it today.  My children are grown, my mom passed several years ago – family spread out all over so the holidays take on a new meaning for me.

This year I am beginning a new tradition of adopting a few families in need over the holiday season and taking on job as ELF in training and trying my best to help Santa fulfill their Christmas List.  What better way to feel the spirit of Christmas, right?  I know it sounds cliche but I really am getting so much more out of this than I can put into words.  God has blessed me so much that I just want to give.  Give back, give my time, give my help, just GIVE of myself.  

However while doing my “elf duties” feeling like this calls for a fantastic RED LIP & some festive clothes.  Get me more in the mood.  So take a minute to smile more, pause and admire all the lights & decor and to tell those near and dear how much you love them.

Cheers – Hugs & Love To You All

Hey There All,

It’s already the middle of January and I can’t believe how fast its going.  January has started off crazy getting over the flu and try to clear out my closet – streamline my wardrobe and make it all just flow.  I am so drawn to the Navy/Black combination for my clothes. It’s just so easy to look pulled together, elegant and ready for anything.

I find this look great for work and easily transitions for a night out.  (Super on the fellas as well)  Plus packing for a weekend becomes a breeze.  I’ll add some great little accessories to change it up or add pops of color.  Perfect for this time of year as well.  

I don’t know about you but the easier the better for me and this is my year for ease…… that is the hope at least.  

I have been so busy with work, home, family it’s been hard to sit still and concentrate.  Looks like 2016 for me is going full steam ahead.  Speaking of steam, I just completed organizing (almost) my storage room in the basement and getting ready to for my new sauna!  Whatttttttt?

 I simply can’t wait!  It will be about 6×8 and I’m turning the basement into a mini gym with my treadmill, weights, a Pilate’s performer and now my SAUNA.  I have loved using sauna for years and it really compliments the healthy/anti aging lifestyle I try and lead.  The benefits are too numerous to list here is a link to show just a few Sauna Health Benefits

Yummy & Healthy Veggie Blackbean Burger

You are going to thank me later – 
these Black bean 
Veggie Burgers ROCK!

1 can Goya Black Beans
1 can Goya Great Northern Beans
1 small  onion
1 package minute rice instant rice (cooks 90 sec- great to have on hand)
Veggie Stock ( low sodium )
Red pepper flakes
Almond Flour

To begin you will  sauté diced onion, carrots, and celery.  About 3/4 cup of each.  Along with 3 to 4 sliced peeled garlic cloves – do this until just tender (not over browned).  I add jalapenos to mine as well your choice!  Set aside to cool. S&P slightly while browning – to help them sweat.  Zap 1 serving of the brown rice = 1 cup or already cooked brown rice add to mixture 

In a food processor pulse 1 can of each rinsed chickpeas and black beans only slightly – you still want a bit of a chunky texture not a 
complete puree or paste.  Then mix together you sauteed veggie mixture & the beans adding S&P to taste, 1/4 cup almond flour for binding, (more or less you decide) crushed red pepper flakes, garlic powder.  Maybe a bit of low sodium veggie stock to hold as well.   You want them to be able to form patties and hold their shape.

At home mixing the veggie mixture
Form patties and chill 10 min – to one hour.  I use parchment paper so they won’t stick.  Store in tupperware with parchment sheets between for several days and remove when ready to cook.

Chilled Patties 

Next saute w/ olive oil over med heat til browned on both sides
transfer to preheated oven and cook for 15 min. at 400 degrees until heated throughout
